2¼ cups of gluten-free flour (Cup for Cup brand recommended)
1 tsp baking soda
1 tsp salt
½ cup applesauce
½ cup coconut or sunflower seed oil
¾ cup coconut sugar
½ cup organic cane sugar
1 tsp organic vanilla extract
2 Flax Eggs (1 tsp ground flax with 2 tsp water) OR ½ cup applesauce or pumpkin puree with 2 tsp baking powder
1 bag dark chocolate dairy-free chips (Enjoy Life brand recommended)
• Preheat oven to 325
• In a mixing bowl, combine flour, baking soda and salt, sift together and set aside.
• Combine applesauce, oil, and sugar with a hand-mixer or in a standard mixer. Mixed until smooth. Add in applesauce with baking powder, or flax egg and combine until smooth. Slowly add in the dry mix to combine.
• Using a rubber spatula, fold in dairy-free chocolate chips. Spoon cookies into quarter-size balls onto cookie sheet.
• Bake in the oven for about 13-15 minutes, until golden brown. Allow to cool and enjoy!
